Yeah, so it’s summer and hot as Hades and I have a baking problem. So what? Don’t be judgin’ me.
This year, for the first time ever, I’ve got a little vegetable garden going. It being my first time and all, I thought it would be smart if I only planted a few things so I could kind of start out slow and experiment and make sure I really dug this whole gardening thing. Well, my plants must have all been bitten by a radioactive spider or something because they’re all as big as me and show no signs of slowing down. My zucchini plant has been particularly productive. Now, I should’ve taken to heart all the jokes about people trying to unload their zucchini harvest off on unsuspecting victims, but, My Stars!, do I ever have a lot of zucchini! In my attempt to keep up with my zucchini bounty, I’ve had to get a little creative. Not wanting to have zucchini for every meal for the rest of my life, I turned to my mother’s zucchini bread recipe. I figured I could make a bunch of loaves of zucchini bread and give those away to neighbors that I’m too scared to talk to, who will in turn think I’m a nice person and spread the feeling of good will and cheer. Sounds great, right? Well, I got halfway through mixing my ingredients before I realized I don’t have any bread pans. Either they were lost in the move or I’ve made it all up in my head that I ever owned them (which is very likely). I had to problem solve FAST. I noticed I had a muffin pan, so I proceeded with caution. With a little experimentation, I was able to figure out how to adapt my recipe and cooking temperature and cooking time to make yummy, delicious, mouth-watering, chocolate chip zucchini muffins.
CHOCOLATE CHIP ZUCCHINI MUFFINS
3 Eggs (Vegan alternatives: 1 & 1/2 Bananas or 1 cup of Applesauce)
2 cups Sugar
3 tsps Vanilla
3 tsps Cinnamon
1 cup Oil
2 cups Zucchini Puree
3 cups Flour
1/2 tsp Salt
1 tsp Baking Soda
1/4 tsp Baking Power
1 cup Chocolate Chips
Preheat Oven to 350 degrees.
DO NOT PEEL YOUR ZUCCHINI. Do you hear me? That’s an order! Take your zucchini and cut it lengthwise. Scoop out the inside pulp and seeds with a spoon and then banish them from your sight. Chop up your zucchini halves in to little pieces and process in a blender until puree’d into beautiful green slush.
Beat Eggs, Sugar, Vanilla. Add Cinnamon, Oil, and Zucchini Puree – beat again.
Add Flour and the rest of the ingredients (save the chocolate chips til last!). Mix until smooth. Dump in your Chocolate Chips and stir.
Grease and flour your muffin tin. Fill each muffin thingy 2/3 of the way full.
Bake for 25 minutes.
Makes 2 dozen muffins.
p.s. I disobeyed my cardinal rule of baking to Billy Joel and was punished by the Piano Man gods. I burned the ever-living crap out of my hand. I have since repented for my sins.
